Easter is a wonderful time for spiritual and emotional renewal and it also leaves some very tangible items behind as well. They are known as hard-boiled eggs. They were elaborately decorated, carefully hidden and hunted down without mercy over the weekend and now they await their fate in the fridge. (“A box without hinges, key or lid but golden treasure inside is hid”…even Gollum knew the answer to that riddle.) They are good by themselves or even inserted whole into a meatloaf for a slicing surprise, but a nice egg salad sandwich is the best way to enjoy this springtime bounty. Just finely chop the eggs, add an equal amount of chopped celery and mix with mayonnaise. (Add a drop or two of some Satan-y hot sauce to the mayo for an extra kick.) Season with salt and pepper and serve on hot buttered multi-grain toast. Only two dozen more to go!
